I love date night. But sometimes, especially in the summer, life can get a little crazy and date nights don’t happen as often as I would like.

So what do you do? Make your own date night at home!!

Our kids go to bed fairly early, so we can put them down and then cook a dinner together and enjoy it while sitting in the backyard. Sometimes I think I enjoy that even more than going out and having to deal with crowds!

The Taco Grilled Fish is the perfect meal for a date night in. Not only is it easy and fast, but it has so much flavor and tastes better than many dishes that I’ve had when we’ve gone out. So break out the grill and have your date meet you in the backyard for an easy, no-fuss, summer date night.

How To Make It

  1. Get your ingredients ready – all you need is 2 fish filets (I like using cod, halibut or tilapia), 1 lime, some taco seasoning, and some cilantro.
  2. Squeeze the lime juice over the fish. I like to do this in a dish so that it doesn’t make a huge mess.
  3. Sprinkle the taco seasoning over the fish. The recipe calls for 1 tablespoon, but I like lots of flavor so I will sometimes increase that amount.
  4. Grill the fish on a cedar plank until it flakes easily, which will probably take about 15 minutes. Remember that all grills cook a little differently, so keep an eye on it because yours might take more or less time.
  5. Sprinkle the fish with cilantro and then serve!

How to Prep Cedar Planks for Grilling

I love grilling fish, but don’t love how often it sticks to the grill.

Enter the cedar plank!

Not only does a cedar plank make it much easier to grill your fish, but it adds some great flavor as well.

The only downfall is that you have to prepare the cedar plank ahead of time. This simply means soaking it in water so that it doesn’t just burn once it’s in your grill.

You will find all kinds of advice when it comes how long you need to soak the cedar planks – anywhere from overnight to 15 minutes. I usually stick with the 1-2 hour range, and that works for me.

Once the planks are soaked, dry them with a towel before placing it in hot grill.

For even more flavor, you flip the board after letting it sit in the grill, instead of just adding your fish to the un-charred side. The extra char will add extra flavor.

Remember to keep an eye on your food as it grills and keep a spray bottle nearby so that you can put out any flames if your plank does catch on fire.

Where to Buy Cedar Planks

Luckily, cedar planks are pretty easy to find, especially during grilling season. Most well stocked grocery stores will carry them, and you can also find them at stores like Lowe’s or Home Depot.

You can also order them online, through places like Amazon (affiliate link) or grilling companies like Weber.

Ingredients

  • 2 filets firm white fish cod, tilapia, halibut, etc, about 6 oz each
  • 1 lime
  • 1 tablespoon Old El Paso taco seasoning
  • 1/4 cup chopped cilantro

Instructions

  • Soak a cedar plank for 1-2 hours. Dry with a towel.

  • Heat a grill to medium heat, about 350ºF. Place the cedar plank on the grill to heat up for 5 minutes.

  • While the plank is heating, squeeze the lime juice over the fish. Sprinkle on the taco seasoning, then rub into coat both filets entirely.

  • Transfer the filets to the hot plank. Close the lid of the grill, keeping it at a medium heat. Keep a water bottle nearby to put out any flare ups on the plank.

  • Grill until the fish flakes easily, about 15 minutes. Sprinkle with the cilantro before serving.

Recipe Notes:

Do not flip the fish while cooking.

Add more taco seasoning if you want a bolder flavor.
