Movie nights are a big deal at our house. During the week my boys watch educational shows for their TV time, but on Wednesday and Friday, to break things up a bit, they get to have a movie night. They get to watch a full-length movie of their choice. We go all out with popcorn or a special treat.
Lately, the boys have been begging me to get Big Hero 6 when it comes out on DVD. Their dad took them to seeit in the theaters, and they’ve been dying to watch it again. Little did they know that I picked up a Big Hero 6 Blu-Ray/DVD at Walmart on Tuesday!!!
I found the Big Hero 6Blu-Ray/DVD combo conveniently on an endcapin the middle of the Entertainment section of Walmart. Isnagged the Walmart exclusive Big Hero 6 Blu-Ray/DVD combo pack because it has a free digital copy that I can download for the boys to watch on the go. Here are the details:

Back to our Big Hero 6 movie night.When I broke the news to the boys on Wednesday that I had a special surprise for them for their movie night, and told them I got them Big Hero 6, I was met with cheers of, “Yes! Mom, this is the BEST night ever!” “You’re the best mom!” Seriously, my kids are very complimentary when they’re excited. They really got down to business with the compliments when I told them I was making them a special treat to go along with their movie night!
High on compliments I set to work baking a my Big Hero 6 inspired dessert.Tipping my hat to the coolest nerd at “nerd school”, I decided to make Gluten-free Honey Lemon Bars.

Gluten-free Honey Lemon Bars

Ingredients
- 2 1/2 Tbsp coconut oil
- 2 Tbsp brown sugar
- 1 cup shredded coconut
- 1/2 cup oat flour
- pinch of salt
- 1 egg white (save the yolk)
- 3 eggs + 2 yolks
- 1/3 cup honey
- 1/3 cup lemon juice
- 1Tbsp lemon zest
- 1/3 cup oat flour
- Approx 3/4 cup mini marshmallows

Instructions
- Preheat oven to 350°.
- Line a 9x5 loaf pan with parchment paper (this will make removing the cooked lemon bars much easier).
- Melt the coconut oil in a medium sauce pan. Add brown sugar, shredded coconut, salt, and oat flour. Stir well, and remove from heat.
- Mix in the egg white (save the yolk for later).
- Pat the mixture onto the bottom of the loaf pan and press firmly down (I used the bottom of a measuring cup to help me flatten the mixture).
- Bake for 10 minutes.
- While the crust is baking, begin preparing the filling.
- In a large bowl, with an electric mixer, beat the eggs and egg yolks together until frothy. Add all the remaining ingredients and beat for two additional minutes.
- Pour the filling over the baked crust and bake for 19-23 minutes (until the center is set).
- Remove lemon bars from the oven.
- Set the oven to Broil.
- Top the lemon bars with marshmallows and return to oven.
- Broil approximately 2 minutes until the marshmallows are a light golden on top. You will need to stand and watch to make sure your marshmallows don't burn.
- Remove from oven and let cool before serving.
- Enjoy!

have you tried almond flour, or coconut flour with this? Sounds good but have no oat flour.

Hi Maryanne,I haven't used almond flour because my son and I are allergic. You could probably use either one with success. I'd be inclined to go with almond over coconut because the recipe is already so coconut heavy.
